Grilled Veggie Sandwich on Naan with Creamy Sun-dried Tomato Goat Cheese Spread

I saw this recipe on the show, The Sandwich King and I had to give it a try!

By marinating and grilling your veggies they become elevated to a flavor you never thought possible! Pair that with pillowy soft Naan bread and a tangy goat cheese spread, and it will be a sure fire hit!

Ingredients

½ cup olive oil

3 Tbsp.  balsamic vinegar

1 Tbsp.  Dijon mustard

1 tsp. honey

3 cloves garlic

Salt and pepper

2 large portabella mushroom caps

2 banana peppers, stemmed, seeded, and quartered

2 medium yellow squash, sliced length wise in ¼ inch strips

2 medium zucchini, sliced lengthwise in ¼ inch strips

1 large red onion, cut into ¼ inch slices

4 oz. goat cheese, at room temperature

4 oz. sundried tomatoes, minced

8 pieces traditional Naan bread (comes 2 to a pack)

2 cups fresh basil leaves

 *This recipe makes 4 large sandwiches

Process

Whisk together oil, balsamic, Dijon, honey, and garlic. Season with salt and pepper. Set aside.

Remove stems on the portabella mushrooms.  Once removed, use a spoon and scrape out the black underside of the cap, also known as the “grill”. Set aside.

Take sliced veggies along with the portabellas, place in a baking dish. Pour the marinade over the veggie mixture and toss together.

Allow veggies to soak up the marinade for 20 – 30 minutes.

Heat a grill pan over medium high heat.

Grill all veggies 3- 5 minutes per side.

Once all veggies have been grilled, set them aside to slightly cool. (make sure once mushrooms have been grilled to slice them thinly)

In a medium bowl mix together goat cheese and sundried tomatoes until well combined, Set aside.

Lightly brush the Naan bread with olive oil and grill on both sides, until a few grill marks appear, about 3 minute per side.

Once grilled, smear Naan slices with the goat cheese mixture, then evenly layer grilled veggies over goat cheese spread. Top with lots of basil. Top with other piece of Naan,

Slice in as many servings as you like and of course… Enjoy!
