O.M.G...This pizza will change your life!! It hits all senses and will send your tastebuds to heaven and back! I am obsessed with anything that has Black truffle in it, and a lover of fruit and cheese paired together! I came up with this pizza when I stumbled upon this delicious truffled goat cheese at Whole Foods, and looked down in my shopping cart and saw I already had peaches and prosciutto...A light bulb went off and I started getting giddy with excitement at the thought of all of these flavors coming together on top of a pizza! Let me tell you...they did!
One 11 oz portion of pizza dough (can be purchased at Whole Foods)
1/2 fresh peach, sliced
Black Truffle goat cheese
1 large ball of fresh mozzarella, sliced
1 pinch red pepper flakes
2 slices prosciutto
1/3 cup arugula
Olive oil, for drizzling
Flour, for rolling out dough
Preheat oven to 400 degrees
Grease baking sheet with olive oil and set aside
Cut half of a peach into inch thick slices, place in small bowl and squeeze the juice of half a lemon on peaches, toss until evenly coated. Set aside.
Use a wood cutting board or clean counter surface for working with dough. Sprinkle work surface with flour to ensure dough doesn't stick. Place pizza dough on floured work surface and sprinkle the top with flour as well.
Using a rolling pin or hands, start gently pulling or rolling dough outwards while turning in a circular motion, so it starts to form a circle. continue this step until dough makes a 9-10" round pizza.
Transfer dough to oiled baking sheet
Next, liberally crumble truffled goat cheese on the dough round
Take peach slices and place them as you like on top of the goat cheese
Cut inch thick slices of mozzarella and place in between peach slices
Sprinkle a pinch of red pepper flakes over entire pizza
Drizzle whole pizza lightly with olive oil
Now its time to bake!
Bake pizza for 25-28 minutes or until the pizza crust has a nice golden brown color
Once out of the oven, tare pieces of prosciutto slices and place all over the top of the pizza
With a small spoon liberally drizzle the pizza with truffle honey
Sprinkle top with arugula
Serve immediately and...ENJOY!!
