Vanilla Bean Sugar Cookies

Since it’s the holidays I had a craving for some sugar cookies, I went to my go to recipe but decided to spice it up by adding in vanilla bean.  The cookies came out so good I think I will start adding vanilla bean in every time!  What I love about the recipe is how quick and easy it is, its perfect for making in large batched to give away as gifts, you can also pair the cookies with your favorite frosting to make them even yummier :)



2 ¾ cup all purpose flour

1 tsp. baking powder

½ tsp. salt

1 cup butter, softened

1 ½ cup granulated sugar

2 eggs

2 tsp. vanilla extract

1 whole vanilla bean (can be found in the spice section at your local supermarket)

Sprinkles of your choice



Preheat oven to 350 degrees and butter a large baking sheet.

In a medium sized bowl sift together the flour, baking powder, and salt, once sifted set it aside.

In a large bowl add in the softened butter, sugar, eggs, and vanilla extract, beat together until the mixture is smooth.

Using a small sharp knife cut the vanilla bean in half lengthwise, scrape out the insides of the bean and stir it into the egg/butter mixture.

In four batches beat in the flour mixture into the egg/butter mixture, be sure each batch is completely combined before adding the next batch. Once all the flour mixture has been combined the cookie dough is complete.

Form the dough into 1 inch balls and roll them in the sprinkles of your choice and place them on the buttered baking sheet.

Bake at 350 degrees for 9 – 10 minutes (cookies will still be very pale in color) let the cookies cool completely before removing them from the baking sheet.
