Who doesn’t love a warm cup of hot cocoa during the holiday season…lets be real, who doesn’t love a SPIKED hot cup of cocoa anytime of year ;-)
I wanted to create a fun holiday cocktail that could be served virgin or with alcohol, I decided to make a spiked peppermint white hot chocolate cocoa… I even went as far as to experiment and make my own peppermint vodka. I broke a bunch of mini candy canes up and added them to a cup and a half of vodka, added a splash of peppermint extract and let it marinate for 30 minutes… it worked, homemade peppermint vodka!
I then added the peppermint vodka to my white chocolate cocoa recipe, topped it with whipped cream and crushed candy canes and, presto! The perfect holiday cocktail!
Homemade Peppermint Vodka:
1 ½ cup vodka
8 mini candy canes, broken in half
1 tsp. peppermint extract
4 cups milk
12 tbsp. White Chocolate Hot Cocoa Mix
6 tbsp. Malted Milk Powder
½ tsp. peppermint extract
6 mini candy canes, crushed into small pieces
* Makes 4-6 cups of spiked hot cocoa
In a pitcher or large container, pour in the 1 ½ cups of vodka, 8 broken in half candy canes, and peppermint extract, give it a stir and let it sit out and marinate for 20 minutes to 1 hour; the longer it sits the more peppermint flavored the vodka will become. (vodka will start the turn pink as the candy canes start to dissolve.)
In a medium sized pot warm the milk over medium heat, once milk is warmed, whisk in the white chocolate cocoa mix, malted milk powder, and peppermint extract; whisk until all powder has been dissolved and mixture thickens a bit, turn off heat.
To assemble the drinks, add a shot (or the amount you prefer) of the homemade peppermint vodka to each serving mug, pour the warmed white chocolate cocoa mixture over the peppermint vodka shot, stir together with a spoon. Top with a generous amount of whipped cream and top the whipped cream with a layer of crushed mini candy canes. ENJOY!
