It has become a Sunday tradition (especially during football season) to get together with our very close friends, Ashley and Scott and their two adorable boys Bradley and Travis! We usually flip flop houses every other Sunday each hosting and making obscene amounts of food…
It is such a blast because our kids play and entertain eachother while we get to hang out cooking, drinking, eating, and watching football. Last Sunday Ashley and Scott hosted and the menu was so unbelievably delicious, to start it all off they made a baked brie with a surprise of raspberry jam inside (mouth starting to water) it was so good, that first cut into the baked brie was a beautiful sight, brie and jam sinfully oozed out covering the plate in a sea of cheese…
Then it was on to sweet potato fries with the most addicting avocado dip recipe Ashley found on the food network, a mixture of fresh avocado, cream cheese, mayo, jalapeno, scallions, and lime juice; it was so creamy and tasted good on everything!! To finish everything off (as if we needed more) they made turkey cranberry sliders, a moist mini turkey patty smothered with cranberry sauce, and the best part, just to make it extra irresistible they used Hawaiian rolls instead of traditional buns, I could not stop eating them; I even spread a little of the avocado dip inside the slider and, OMG it was heaven!!
I hope you all try these recipes; they are all so great for entertaining and super quick and easy to make.
Baked Brie with Raspberry Jam
1 sheet frozen puff pastry, thawed
1 8 oz. round of Brie cheese
½ cup raspberry jam
1 egg, beaten
Preheat oven to 425 degrees and grease a large baking sheet
Roll out puff pastry sheet slightly on a floured work surface just to make the sheet a bit larger. Place the brie round (leave the rind on) in the center of the rolled out puff pastry. Spoon the raspberry jam on top of the brie round, gather and fold the puff pastry up and around the top of the cheese, completely covering it.
Brush the top of the bundled puff pastry with the beaten egg, Transfer to the baking sheet and bake for 20-25 minutes; it should be light golden brown. Let cool 5-10 minutes before serving.
1/3 cup mayo
1/3 cup cream cheese
1 jalapeno, seeds removed and finely chopped
2 scallions, white and light green part only, chopped
1 lime, juiced
Salt and pepper
Place the avocado, mayo, cream cheese, jalapeño, scallions, and lime juice in a food processor or blender. Blend ingredients until it becomes a smooth and creamy dip, season with salt and pepper and do one final mix; transfer to a small bowl and serve as a dip or condiment.
Turkey Cranberry Sliders
1 ½ lbs. ground turkey
1 can whole cranberry sauce
1/3 cup green onions, finely sliced
1 ½ tsp. garlic salt
1 ½ tsp. black pepper
Small butter lettuce leaves
2 packages KING’S HAWAIIAN SWEET ROLLS
In large bowl mix together ground turkey, ¼ of the cranberry sauce, green onions, garlic salt, and pepper. Once mixed form mixture into a bunch of small flat burger patties.
Once patties have been formed, heat a large pan over medium heat, spray with non stick cooking spray and cook patties 5 minutes on each side or until they are completely cooked through.
To assemble, place a piece of the butter lettuce on the bottom part of the Hawaiian roll, then top the lettuce with a turkey patty, smear the top part of the roll with a generous spoonful of the cranberry sauce and place on top of the patty; there you have it a turkey cranberry slider!
