Mini Cinnamon Rolls with Cream Cheese Frosting

Yum! Yum! Yum!!!

Sean and I had a major craving for cinnamon rolls but I didn’t have the time to make the dough from scratch so I thought I would try puff pastry sheets instead… they worked great! I paired the pillowly mini cinnamon rolls with sinfully decadent cream cheese frosting. My recipe is super quick and unbelievably delicious!



1 box puff pastry sheets, thawed (2 per box)

1 cup granulated sugar

¾ cup brown sugar

2 tbsp. cinnamon

1 whole vanilla bean (can be found in the spice section)

1 cup walnuts

1 cup raisins

8 oz. brick cream cheese, softened

¾ cup powdered sugar

1 tsp. vanilla extract

6 tbsp. milk

Flour, for rolling out dough

Preheat oven to 350 degrees

Grease a 9-inch round baking pan with butter, set aside.

In a medium bowl mix together the granulated sugar, brown sugar, and cinnamon.

Using a sharp knife cut the vanilla bean in half-length wise and scrape out insides of the bean; add to the cinnamon sugar mixture. Stir with a fork until well-combined, set aside.

Sprinkle a cutting board or clean work surface with flour. Unfold puff pastry onto work surface, using a rolling pin, roll out puff pastry into a large rectangle. Once puff pastry has been rolled to appropriate size liberally sprinkle half of the cinnamon sugar mixture all over rolled out dough. Add a layer of walnuts and raisins spreading them all over top of the cinnamon sugar mixture layer.

Starting at one end of the rolled out dough, begin to fold and roll forward until it has formed a long log. (be gentle when rolling into log to make sure filling stays inside)

Once the log has been formed cut it into inch and half thick pinwheels. (they should look like mini cinnamon rolls) Continue this entire process until all puff pastry and filling has been used.

Transfer mini cinnamon rolls to greased baking dish. They should be nestled close together filling the entire pain.  Bake for 30 minutes.

In a large bowl, beat together cream cheese, vanilla, and powdered sugar. Once combined add in milk, beat for another 30 seconds or until it be comes a slightly running frosting.

Once cinnamon rolls come out of the oven smother them with the cream cheese frosting and serve immediately!
