Homemade Cheesy Gordita Crunch

Who doesn’t love a Cheesy Gordita Crunch from Taco Bell?! They are so ridiculously tasty, but they don’t exactly leave you feeling guilt free…lets face it, what is in that meat anyway? (yikes!)

My recipe is still a splurge night meal that leaves you feeling so satisfied but is made with high quality ingredients so that you can also feel good about what you are putting in your body!



1 ½ lb. grass feed ground beef

¼ cup taco seasoning

¾ cup water

1 can vegetarian refried beans

3 cups Colby Jack cheese, shredded


1 container sour cream

1 container guacamole (or homemade)

1 package shredded lettuce (I buy the brand Shreds)

1 box taco shells

1 package small thick flour tortillas (I buy La Tortilla Factory Hand Made Style)


Special Sauce:

1 cup mayo

½ cup ketchup

4 tbsp. sweet pickle relish

A few dashes hot sauce (optional)

Salt and pepper, to taste



In a medium bowl, mix together mayo, ketchup, relish, and hot sauce. Sprinkle in salt and pepper, give sauce a final mix and refrigerate until ready to use.

Heat a large pan over medium – high heat, add the ground beef to the pan and cook until browned and completely cooked through.

Drain fat from pan, stir in taco seasoning and water. Simmer for 5 minutes until the meat has absorbed all the liquid. Turn heat down to low to keep the taco meat warm.

In a medium pot over medium heat, heat up refried beans until completely warmed through. Turn heat down to low to keep beans warm.

Place a flour tortilla on a paper towel, spread a layer of the special sauce onto the tortilla, then liberally sprinkle a layer of cheese over the special sauce.

Place the sauce and cheese covered tortilla in the microwave, microwave for 20 seconds or until cheese begins to melt.

Once microwaved, immediately wrap the tortilla around a taco shell. Gently press to adhere the tortilla and taco shell together.

Continue this process until all tortillas and taco shells have been combined.

Once combined, smear a layer of refried beans into each taco shell, then add a layer of taco meat. Sprinkle shredded cheese over taco meat layer. Add a dollop of sour cream and guacamole and top with shredded lettuce. Serve immediately and enjoy!
