I love the combination of sweet and spicy, there is something so satisfying about that flavor combination! I especially love that combo around the holidays; it’s a great way to spice up a tired dish. I came up with this recipe last thanksgiving when my aunt asked me to bring a yam or sweet potato dish… my mind immediately went to all the usual suspects and I thought how can I add a little something special without disappointing the purist who expect a certain dish? My Sweet & Spicy Roasted Yams were it! The sweetness coming from maple syrup and honey and the spice with fiery cayenne and red pepper flakes! It satisfied everybody's tastebuds without over powering the yummy flavor of yams.
5-6 yams, cut into 2 inch cubes
1/3 cup olive oil
1/3 cup maple syrup
2 tbsp. honey
1/8 tsp. cayenne pepper
1 pinch red pepper flakes
Salt and pepper, to taste
Preheat oven to 400 degrees.
Place cubed yam chunks into a large bowl, pour olive oil, maple syrup, and honey over the yams; toss until completely coated.
Add in cayenne pepper, red pepper flakes, salt, and pepper. Toss again until the spices have been evenly distributed over the yams.
Transfer to a large oiled baking Sheet. Bake for 25-30 minutes, or until yams are cooked through.
